Today, I interviewed Missy Lapine, “The Sneaky Chef.” Missy Chase Lapine is best known as the originator of the wildly successful Sneaky Chef Method and series of books, including her flagship New York Times bestseller, The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids’ Favorite Meals (Running Press, April 2007). Missy has made The Sneaky Chef a household name with a passionate following, and is transforming the way America feeds its children. Missy is also the founder of The Sneaky Chef Foods, LLC, a company committed to developing products that improve children’s health by helping moms easily feed their kids the fruit and veggies they need in the foods they already love.

“A Tisket A Tasket What’s Inside My Basket?”
Today’s secret ingredient is… “Red Cabbage.” Here is my recipe for “German-Style Sweet and Sour Cabbage.”

German-Style Sweet and Sour Cabbage

Ingredients:
1 medium head red cabbage, chopped
2 c. water
1 c. distilled vinegar
1/2 c. sugar
1 tsp. salt

Directions:
Place all ingredients in a large pot over low heat and simmer for 1 hour or until cabbage is tender.

“Kitchen Tips N Tools!”
Today’s kitchen tool is a… “Potato Masher.” Here is a recipe for my “Rosemary Potato Cakes.”

Ingredients:
1 15-oz. can diced potatoes, drained
1/2 c. mayonnaise
1 c. Italian bread crumbs
1/4 c. Parmesan, grated
2 tbsp. Lipton beefy onion soup mix
1 tbsp. fresh rosemary, minced
2 tbsp. olive oil

Directions:
In a large bowl, mash potatoes leaving some chunks. Mix in remaining ingredients except olive oil. Form into palm size patties about 1/4 inch thick. In a large skillet, heat olive oil over medium high. Fry potato cakes until brown and crispy on both sides. Serves 4.

“Spice Detective!”
Today we’re investigating… “Oregano.” Here is a recipe for “Herb Pesto.”

Ingredients:
1/2 c. fresh parsley
1 tbsp. fresh mint
2 tbsp. fresh oregano
1/2 c. pine nuts
1/4 c. Parmesan
1 tsp. salt
1/2 tsp. white pepper
1 lime, juiced
1/4 c. olive oil
1/8 c. chicken or vegetable stock

Directions:
Place all ingredients in a food processor and blend until a paste is formed. Serves 6-8.

“Snacktivity Time”
It’s Snacktivity Time! Here, I give you fun easy breezy snack ideas. Today’s Snacktivity is… “Sparkling Watermelon Agua Fresca.”

Ingredients:
2 c. fresh watermelon juice (about three cups watermelon, blended and strained)
4 c. carbonated water
1/4 c. local honey

Directions:
Mix well and serve over ice.

“Creative Cuisine”
This is my recipe for my “Maduros.” Maduros are fried sweet plantains.

Ingredients:
1/2 c. canola oil
1 plantain, peeled and sliced diagonally 1/2 inch thick

Directions:
Heat oil in a skillet on medium heat. Fry until golden brown on both sides.

Here’s another “Creative Cuisine.” Here’s my recipe for the “Elveez Sandwich.”

Ingredients:
4 slices of bread
4 tbsp. mango jam, divided
6 tbsp. creamy peanut butter
Maduros

Directions:
Spread peanut butter and jam on bread. Arrange maduros on bread. Place bread on top of maduros. Serves 2.

“Cookin’ Crafts!” Here is a fun kitchen-related craft. Today’s cookin’ craft is how to make “Boiled Egg People.”

Supplies:
Boiled Eggs, fully dried
Black water-based markers

Instructions:
Step 1: Draw different silly faces on all your boiled eggs with the marker.
Step 2: Place the boiled eggs in the egg carton.
Step 3: Now you can tell the difference between the boiled eggs and the raw eggs.
Step 4: Eat your boiled egg people and enjoy!
