The great thing about this Slow Cooker Mango Pepper Pork recipe is that you can add everything to the slow cooker in the morning, set it, and forget it. When you’ve come home from a busy day, you’ll immediately smell the aromas of a delicious dinner waiting for you. The mango and chilis make the perfect combination of sweet and spicy that everyone will love. You can serve the pork in a tortilla as a taco as I have, or you can eat it with a side of rice drenched in all the fantastic au jus from the pork.
Ingredients
- 4 cups chicken broth
- 2 small onions, sliced
- 5 cloves garlic
- 1 tablespoon Adobo seasoning
- 1 tablespoon paprika
- 1/2 teaspoon cumin
- 2 mangoes, cut into small chunks
- 5 chiles de arbol
- 3 pounds pork loin
Instructions
- Add chicken broth, onion, garlic, Adobo, paprika, cumin, mango, and chiles into a slow cooker and stir to combine. Add pork loin and cover pot with lid. Cook on low for eight hours.
